Mashed Potato



Yum



Creamy mashed potatoes...
 
 
 
 
Ingredients:
 
Potatoes 3 large
Milk 3 tbsp
Butter 1 tbsp
Salt n pepper to taste
 
Method:
 
Boil the potatoes till easily mashable.
 

 
 
Peel and roughly brek the potatoes in to small pieces.
 
 
Fluff the broken potatoes with a help of fork and mash it as much as possible.
 
 


 
 
 
 
 
 
 
 
Now add the milk salt and butter and mix it vigerously to bring a creamy texture.
 

 
 
Now transfer it to the serving bowl.







No Mess Gobi n Spring Onion Paratha

Absolutely easy n no mess paratha...



Ingredients:

Whole wheat flour 2 cups heaaped
Medium sized Cauliflower 1
Spring onions 5 to 6 springs (only the green part)
Oil  2 tsp
Jeera 3/4 tsp
Chilli pow 1/2 tbsp
Daniya pow 1/2 tbsp
Turmeric pow 1/4 tsp
Salt and water as needed

Method:

Wash n clean the cauliflower. (discard the thick stems)


Now put these into the blender or food processor.


Use the pulse button in ur blender to make the gobi minced.


Now chop the spring onions green part into fine pieces.


Add oil in a pan and add the cumin seeds and let it splutter.


Once the cumin splutters, switch off the heat and leave it for 30 sec and then add the turmeric, chilli n daniya pow to the oil and mix well.


Once the mixing is done, add the minced cauliflower n spring onions to the pan.


Mix as soon as possible or the chilli pow mixed in oil will get burnt due to the remaining heat of the oil. After mixing this switch on the heat and keep cooking for few mins.


Then add little water and salt to this mixture and cook closed with a lid in moderate heat.


Once u feel it has cooked switch off the heat and let it cool completely.

In a big bowl add the wheat flour salt and the veg mixture.


Mix well and knead it to a regular roti dough consistancy. (u may add little water to obtain the consistancy)


Apply little oil and set it aside for atleast an hour.

Now follow the regular steps of making chapathi/roti.



I used a roti maker.
Use little oil or ghee to make it soft.

Easy Onion Chutney

Everyone wants a recipe which will be tasty yet easy to make and this is one of that kind... A great companion to accompany with dosa and idli...



Ingredients:

onion 2
tomato 1 or tamarind small marble size
dry chilli 4 or more for spicier

oil 2 tsp + 1 tsp

mustard seeds 2 tsp
curry leaves few strings

Method:

Chop onions and tomatoes (if using) roughly.

Add the dry chilli and sprinkle oil.

Microwave high for 4 to 5 mins.

Cool it completly and grind it in blender till smooth.

Add water as needed till u reach the desired consistancy.

Add oil in pan and add the mustard seeds n curry leaves.

Add it to the ground mixture after the mustard seeds splutter.

Serve with hot idlies or dosa.



Coconut Milk Pulao

Fantasic Coconut Flavoured Pulao...



Ingredients:

large coconut 1 grated or sliced
ginger 1" piece

onion 1 large
garlic 1 bulb
green chilli 5 - 6
curry leaves few
mint leaves 1 hand full

oil 1 tbsp
whole garam masala

long grain rice 2 cups
coconut milk 4 to 4 1/2 cups
salt n sugar to taste

Method:

Grind the coconut n ginger with adequate water to squeeze out the milk.


Once it has ground finely squeeze out the milk with a help of a strainer.


Soak the rice in the coconut milk with salt n sugar (dont avoid sugar it gives a wonderful taste)



Chop onion, chilli, Peel garlic ( i like to use it as whole cloves, u may also use crushed).

Keep the whole garam masala ready.



Add oil in pan and add the whole garam masala to it.


Once its fried little add the onion and g.chilli with curry leaves and fry.


Add the garlic and mint leaves to it and fry till the onions are browned.



Once it has reached the above colour add this mixture to the rice n milk mixture.


Cook this mixture in preassure cooker or electric cooker.

Once done serve hot with onion or cucumber raitha.


Cappuccino Cake Fudge Pudding

Very rich pudding for coffee lovers...


Ingredients:

For the cake:

1 1/3 cup flour
1/4 cup cocoa (unsweetened)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 cup sugar
1/2 cup plain yourgut
3/4 cup ctrong cold black coffee (i mixed 2 tbsp instant coffee with cold water)
1/4 cup regular oil (ur choice)

Method:

Preheat the oven to 175 C.

Combine all dry ingredients (flour, cocoa, baking powder, baking soda, salt n sugar) mix well.


Whisk the yorugut, cold coffee and oil togather to blend it to a smooth mixture.


Add the yourgut n coffee mixture to the dry ingredients and blend well till smooth n without lumps.




Line ur baking pan and pour the batter and bake in the preheated oven for 40 mins.

Once its done take it out and remove from the pan. No worries if ur cake breaks, u actually need it to be scrumbled.

Scrumble ur cake and arrange it in ur pudding dish.



Mean while prepare the syrup for the cake.

Ingredients For The Syrup:

100 ml water
1 tbsp instant coffee
4 tbsp sugar

Method:



Place all ingredients in the pan and heat it up till the sugar has fully dissolved.

Now spoon the syrup all over the scrumbled cake and make it drenched with the syrup.

Next make the fudge ready to get finished with the pudding.

Ingredients For Fudge:

unswetened cocoa powder 3 tbsp
corn starch 3 1/2 tbsp
sugar 3/4 cup to 1 cup
salt 1 pinch
strong black coffee 1 cup
butter 1 tbsp
vanilla extract 1 tsp

Method

Mix the cocoa, cornstrach, salt n sugar in a bowl.

Heat the coffee in a saucepan and add the butter to get it melted.

Now add the cocoa mixture into the coffee and whisk well over a medium heat and keep whisking untill it reaches a pudding like consistancy (approx 5- 7 mins)

Remove from heat and mix in the vanilla extract.

Let it cool for 5 mins.

Pour this fudge over the scrumbled cake.

Cool in the fridge completely before serving.

NOTE: this fudge can be used as a frosting for ur cakes also.

Apple Carrot Smoothie

Very nutritious Breakfast smoothie...

Ingre:
2 carrots
apple 1
banana 1(optional)
sugar or honey to taste
milk (i used low fat)
Ice cubes 1 cup
almonds few (to be cooked with the carrots) optional
Method:
Cook the peeled n sliced carrots in water till they are easily mashable between 2 fingers. (if not cooked, throat will hurt while drinking)
Peel core and dice the apple.
Roughly cut the banana.
Once the carrot had reached the mashable consistency add the apple and let it boil for a min. (this step can be skipped and the apple can be added without cooking)
Cool everything and add in a blender with milk n sugar or honey and blend it till smooth.
Serve cool.

Paneer 65

Yum yum Paneer 65...
 
 
 
Ingredients:
 
200 gms (1/2 lb) Paneer (Cottage Cheese)
2½ tablespoons Maida (all purpose flour)
3 tablespoons Corn Flour
1 tablespoon Rice Flour
1½ teaspoons Ginger paste
1½ teaspoons garlic paste
1/4 teaspoon Garam Masala Powder
1 teaspoon Red Chilli Powder
1 teaspoon Coriander Powder
1 drop of Red Food Color (optional)
5 tablespoons Water
For deep frying Oil
2 - 3 springs of curry leaves
1½ tablespoons Thick Curd
Salt to taste
 
Directions:
Cut paneer into 1-inch cubes.
 
Mix maida, corn flour, rice flour, ginger, garlic, chaat masala powder, garam masala powder, 1/2 teaspoon red chilli powder, red food color and 3/4 teaspoon salt in a medium bowl.
 
 
 
Add approx. 5-tablespoons water and make a medium thick paste.
 
 
 
Add paneer cubes in prepared paste and mix well until coated with it.
 
 
 
Heat oil in a pan over medium flame for deep frying.
 
Deep-fry all pieces in small batches (4-5 pieces at a time) until golden brown and crispy.
 
Drain and transfer to a plate with paper napkin on plate before transferring them on plate to absorb excess oil.
 
Serve hot with deep fried curry leaf springs.
