Very flavourful n citrusy chicken...
Method:
Season the chicken with salt and pepper, stuff with half of the lemon slices n garlic, and place breast side up in the middle of the parchment paper
(using parchment paper minimizes after cleaning process).
Place the rest of the garlic n lemon slices beneath the skin (use ur finger to make space between the skin n meat).
The chicken has to be marinated minimum for 8 to 12 hours.
Bake in the preheated oven until the chicken has cooked, about 1 1/2 to 2 hours.
A meat thermometer inserted into thickest part of the thigh should reach 180 degrees.
To get crispier skin shift the chicken to the top most rack ( near the grill and turn to grilling mode for just 5 mins).
