Baked Garlic Zucchini

Zucchini... the wonder veggie. I have never heard about this veggie before an year, but after knowing about it this has taken place in almost every grocery shopping list. We love it alot. I try and feed everyone in the family with this veggie in some form or other. I use it in salads most of the time, and in muffins with the combination of carrots but this is the first time i am baking zucchini. The result was wonderful. We loved the combo of garlic n zucchini, hope everyone will love like we did.



Ingredients:

Zucchini 4
Tomato sliced thinly or cherry tomatoes halved
Garlic 5-6 large cloves
Olive oil for drizzling
Salt n Pepper to taste
Cheese any kind of ur choice ( i used cheddar cheese)
Herbs of ur choice ( i used fresh basil from my garden)

Method:

Slice the zucchini into half lengthwise, then scrape a lengthwise skin from the backside of each piece as shown in the below picture (this helps the zucchini to keep stable).



Now arrange the zucchini in the baking tray and drizzle with olive oil.



Crush the garlic and then chop very finely or grate the cloves finely. Place the sliced tomatoes on top of each zucchini and sprinkle with the chopped garlic n herb ur using, then sprinkle with salt n pepper.



Grate the cheese of ur choice on top of the arranged zucchini's, now its time for baking...


Bake in the preheated 375 F/ 190 C oven for 20 to 30 mins or till soft.



Serve while hot... enjoy.
