Loaded Broccoli Onion Loaf

Hi everyone... I think I left a very long gap since my last recipe. Was actually feeling very lazy to post but now am back to post another easy pesy healthy recipe. The tiresome work with the loaf making must be the kneading right? But am basically a very lazy person and i dont like to spend more time in the kitchen so came up with this simple recipe and  Made this for dinner and it was a hit at our house. Couldn't believe how an easy recipe can taste so tasty while being loaded with all health benefits of broccoli.

I made this same recipe with adding some carrots in it and again it was a success... it was heavenly.

Ingredients:

Broccoli 1 large head or chopped small florets measuring 3 - 4 cups UPDATE: i added a large carrot grated and used with the broccoli (actually u can add any veggie of ur wish)
Onion 1 chopped
Garlic 5 cloves chopped
Spring onion greens 3 tbsp
Eggs 3
Oil 4 tbsp
Cheddar cheese 1/3 cup or more if u wish
Flour 1 cup
Baking powder 1 1/2 tsp
Salt n pepper to taste



Method:

* Preheat the oven to 350 F/ 180 C.
* In a large mixing bowl add the eggs, grated cheese, oil, minced garlic, spring onions, salt n pepper and mix well.
* Steam the broccoli (with the veggies,if using any) till it reaches the bright green color. Let it cool.
* Now add the cooled broccoli florets and chopped onions and mix till it gets coated fully.
* Shift the flour and baking powder together and add it to the broccoli mixture and mix well.
* Grease a loaf pan (can use a pie plate if u own one) with butter and flour then transfer the mixture to the pan and bake for 35 mins at 350 F/ 180 C.
* Enjoy when its hot.
