Here i am with the recipe for homemade soy milk... Yesterday i posted the recipe for Okara / Soya Bean Paste Cutlet and i promised that i ll very soon post the recipe for homemade soy milk too...
So i have kept up my promise.
Lets get going to the recipe.
Ingredients:
Soy bean 1 cup
Water 1.5 liters
Flavoring of your choice (i used crushed cardamom)
Sweetener of your choice
Method:
Soak the dry soy beans overnight.
Add enough water to the beans and blend it in a blender/mixer till the beans have become a fine paste, add more water and blend thoroughly.
Pour the mixture into a cheese cloth lined over a strainer and let it sit like this for at least 1/2 an hour so most of the liquid had dripped.
Now squeeze out any extra liquid in the mixture and keep the paste aside, this will be used for making Okara/ Soya bean paste Cutlet and many other stuff.
These are very nutritional, don't throw away.
Add the liquid and crushed cardamom(if using) to a non stick pan and bring it to boil and simmer till you get the desired consistency of the milk.
I like mine a bit thinner and i store without adding any sweetener as i use the milk for smoothies, but you can add any sweetener of your choice.
Let the milk cool completely then strain and store in the fridge.
