Hello everyone, it has been 2 months since i posted something here... the reason was my vacation. Right before my vacations i went on a trip to Armenia and just loved the place and food... If you follow my Facebook Page you will find the Armenian Foodie posts there.
Ingredients:
2 cups cooked buckwheat
½ cup walnuts, toasted (optional)
1 tbsp olive oil
4 cloves garlic, chopped
3 zucchini, sliced
1 cup corn,
4 - 5 basil leaves, sliced (optional, if on hand)
2 boiled eggs, chopped
juice of 1 lemon
Salt to taste
fresh ground black pepper
Method:
Soak the buckwheat for 4 hours then cook with salt and water till the required consistency is achieved, strain the excess water and set aside.
Dry roast the walnuts if using. They add an extra crunch to the dish.
Add olive oil to a pan and sauté the garlic without changing color then add the zucchini and cook for approx 3 min.
Add the corn and sauté for 2 mins then add the cooked buckwheat, basil leaves, chopped eggs and pepper, check for salt.
Sprinkle the lemon juice and
Toss everything together till combined.
Serve
Ok let me get to the subject Grechka means nothing but Buckwheat in armenian. they consume alot of this and i got around 10 kgs while coming back and as iam back from my vacation i planned to play with this new ingredient in my kitchen.
My first recipe was an awesome success with a very picky child who said it was very tasty...
Not only tasty but the buckwheat is one of the highly healthy ingredient that contains of high nutritional values...
