8 Mins Mutton Dum Biryani

Have you ever heard of a dump and go Biryani?
Yes you can if you have an Instant Pot. Trust me this was the best biryani i have ever made. 

All you have to do is marinate, dump and cook. Yes its that easy to make a perfect biryani and the mutton comes out so soft and the rice is perfect.

Now its as easy as you cook white rice to make a good biryani even on a week day and all you need is jus 20 mins max. 

INGREDIENTS

MARINATE TOGETHER

1kg lamb with bones (small to medium cut)

1 cup yogurt

2 large Onion minced 

10 - 15 chilli chopped 

½ cup coriander leaves chopped

1 cup mint leaves

1 tbsp ginger crushed

1 tbsp garlic crushed

1 tbsp garam masala 

Salt to taste

1 tsp turmeric 

1 tbsp chilli powder (adjust to taste)

1 tbsp corriander powder 

6 Whole Cardamom

2" Cinnamon broken to pieces

8 - 10 Whole Cloves

FOR THE RICE

3 cup Basmati Rice (wash & drain)

Salt for rice (remember you have salt added to the marinade) 

3 cup water 

1 lemon juice

FOR THE GARNISH

½ cup chopped cilantro
1 pinch saffron
Fried onions (see notes)

INSTRUCTIONS

In a bowl, add all the ingredients for the marinade, along with the lamb. (DO THIS THE PREVIOUS DAY)

In the inner liner of your instant pot, add 2 tbsp ghee and spread the marinated lamb and spice mixture to cover the bottom.

Carefully spread the rice all over the meat in a uniform layer.

Pour in the 3 cup of water mixed with lemon juice and salt, gently push down the rice until it's submerged under water. Do not mix the lamb and the rice together.

Sprinkle the saffron on top of the rice.

Cook at High Pressure for 8 minutes and allow it to fully release pressure naturally. This part is important, here is where we are doing the "dum" (steam cooking) part of the Dum Biryani. 

Open and give the rice and meat a gentle mix. Garnish with 1/2 cup chopped cilantro and the fried onions if using.



NOTES:

If making fried onions it can either ve made in an airfryer or oven. In my opinion the airfryer gives better result but i dont own an airfryer right now so i used an oven to make it.

OVEN METHOD

STEP 1
Take one onion and slice it as thinly as possible, add to a bowl and mix with 1 tsp salt and a tbsp oil, make sure you break the slices so none of the onions are stuck together.

STEP 2
Lay the onions in a lined tray and bake in the oven for 10 - 15 mins at the highest temperature seeting in your oven. Mix a couple of times.

AIRFRYER METHOD

Follow the STEP 1 from the OVEN METHOD, meanwhile Preheat the airfryer at 200c for 5 mins.

Add the onions in batches to the airfryer basket and keep checking every 3 mins. Things happen fast in the airfryer.

Once its brown and crispy remove to a plate and do the same with all onions.
