Coconut Agar Agar Jelly Bites

Today am here with a recipe for the cooling jelly bites. 

Agar Agar or china grass has a naturally cooling effect on the body. This is also known as the vegetarian version of the gelatin. 

The tender coconut and agar agar mixture makes this jelly uniquely cooling and the taste of coconut milk and coconut water gives it a very pleasant flavour to it. 

It can be set in a slanted cup to make a fancy looking dessert. And the best part is that agar agar doesn't melt or lose its shape like gelatin when kept outside. So this can easily be served at room temperature. 

INGREDIENTS 

SET 1

500 ml Coconut Milk 
sugar to taste 
5 gms Agar Agar 

SET 2

500 ml Water + coconut water or tender coconut water 
sugar to taste
5 gms agar agar

METHOD 

Heat 1/4 cup water and dissolve the agar agar in it. 

Slightly warm the coconut milk, make sure you dont heat it too much as the tasye will differ. 

Once the agar agar is completely dissolved add it to the warm coconut milk with enough sugar to taste and pour in the pan or container you want it to set. 

Carefully keep it in the fridge for it to completely set, approx 30mins.

Meanwhile follow the same procedure with the SET 2 ingredients and slowly pour this mixture on top of the firmed milk mixture. 

Transfer to the fridge and let it cool down completely. 

Once set and firm, use a knife to cut the jelly into desired size cubes or squares.
