Double Roasted Potatoes

Potato is one vegetable that everyone loves no matter what age. Any form of potatoes will easily tempt a person. 

Especially if the potatoes are crispy and soft at the same time then that is partytime in the mouth 😂. 

Yes this is some magical recipe that makes beautifully crispy outer and soft inside potatoes with amazing spice flavours. 

Try it out and you will for sure fall in love with it... 

INGREDIENTS 

500 gm baby potatoes

MARINADE

1 tbsp chilli powder
1 tbsp corriander powder
1 tsp cumin powder 
1 fat garlic clove or 1 tsp garlic powder 
1 tsp dried rosemary 
1 tsp italian herb mixture
Salt to taste
4 tbsp oil

METHOD

• Boil the potatoes in water until fork tender, approx 10-15 mins. 
• Drain the potatoes and let it sit for a bit until the water drains. 
• Preheat the oven to 220C. 
• Mix all the marinade ingredients together. 

• Add the spice mixture to a large bowl with the potatoes, mix well until every potato is coated with the marinade. 
• Spread some oil in a oven tray and place the potatoes in the pan. 
• Take a flat base bowl or cup and slowly smash the potatoes flat. Brush the remaining marinade on top of the smashed potatoes and sprinkle some oil on top. 
• Bake at 220C for 35-40 mins. 
• Enjoy with a dip of your choice.
