Instant Pot Vegetable Quinoa

Quinoa is a super food and am fairly new to this grain in my cooking. I am very comfortable with the millets which is often confused with quinoa. 

To my knowledge i have never made pongal with rice, it has always been with some kind of millet but quinoa isnt a millet so i had to do some research and learn about it. 

But this grain was very forgiving and treated me very well until now. I have tried different recipes with this super grain. 

Today am here to share the most loved quinoa recipe which is not only tasty but very healthy as its loaded with veggies. 

I have at times made this with some sausages too and it equally tastes great. 

INGREDIENTS 

2 cups quinoa
2 cups water 
Veggies as per ur wish (i used forzen and fresh mixed) 
Ghee 2 tbsp
Cumin seeds
Chilli powder 2 tsp
Corriander powder 2 tsp
Garam masala 1 tsp
Turmeric powder 1/2 tsp
Salt to taste

Onion 1 large chopped
Garlic 5 cloves chopped

METHOD

Switch the instant pot to saute mode, add ghee and once hot add the cumin seeds and let it splutter. 

Add chopped onions and saute for couple of mins then add garlic and 2 more mins.

Cancel the saute mode and dump in the spices first and mix then rest of the ingredients and mix well so the spices mixes with the veggies and quinoa. 

Pressure cook for 2 min and once done let it pressure release naturally.

Add lemon juice if u wish, give it a stir. 

Serve hot. 

NOTE

*If u wash the quinoa before cooking add a little less water. 

*Instead of water any broth can be used which will give an added flavour.

*Add any vegetables of your choice, even some sausages or tiny bits of chicken can be added.
