Peach cobbler is a dish that gives so much summer vibes but its great to have it warm on a chilly evening. The warm and cold combo gives great comfort while eating.
The finished product reminds me of an upside-down cake but this is completely different from anything cake. The sponge that forms on the top is beautifully complemented with the juicy peaches on the bottom.
I used nutmeg and my house smelt amazing on the process. Give it a try and am sure you will not regret it.
5 medium peach, sliced
1/2 cup sugar
1 tbsp lemon juice
1/2 tsp cinnamon or nutmeg powder
1/2 cup melted butter
1 cup flour
3/4 cup sugar
1 pinch salt
1 tbsp baking powder
1 cup milk
METHOD
* Take the peach slices in a bowl, mix in the 1/2 cup sugar and lemon juice to the slices and mix well. Keep aside for 30 mins, this will make the peach soft and juicy.
* In a mixing bowl add the flour, sugar, salt and baking powder, give it a mix. Add the milk to it and whisk well to make it into a smooth batter.
* In a baking dish pour the melted butter, on top of the butter add the prepared batter and spread it gently. Do not mix it with butter.
* Now add the peach slices along with their juices on top of the batter. Again do not mix it. Make sure you have added the slices all over the batter.
* Bake in a preheated 190C oven for 35 - 40 mins.
* Serve warm with a scoop of ice cream or whipped cream.
