Broken Egg Kurma |Mutta Kurma |Egg Curry

Broken egg kurma is a dish that my mom makes for breakfast with some piping hot idlis and that used to be heavenly.
The speciality of this recipe is that the eggs are broken directly into the curry and cooked in the curry so that's when the magic happens.

While cooking in the curry the eggs absorb the flavour of the spices added and gives a unique taste.

INGREDIENTS 

6 eggs

2 tsp oil
4 onions 
4 tomatoes
1.5-inch ginger
6 cloves garlic
8-10 green chilli 

2 tsp oil
1 tsp garam masala 
1 tsp turmeric powder 
Salt to taste
Few curry leaves
2 tbsp coriander leaves

A handful of Almonds/cashews/ coconut 
METHOD 

* Soak the almonds or cashews.
* In a pan add 2 tsp oil and add in the onions, tomatoes, ginger, garlic and chillies and saute until the onions are soft. Set aside and let it cool completely. 
* Once it's cool enough add it to a blender and blend it until its a fine paste. 
* In the same pan add 2 tsp oil and once hot add the garam masala, the ground paste, turmeric powder and salt to taste. Mix well and cook for a minute. 
* Add 1.5 cup water and mix well. Cover and cook in medium heat for about 5 to 10 minutes. 
* Once the gravy is thick enough, break the egg directly into the curry while the heat is low.
* Let the eggs get cooked in low heat. 
* Meanwhile add the soaked almond or cashew or coconut to a blender and grind it to a fine paste by adding very little water.
* Check the curry by mixing gently, if the eggs are cooked. 
* Once the eggs are cooked well add in the paste and mix gently without breaking the eggs. 
* Add curry leaves and coriander leaves. Serve hot with idly, dosa or roti.
