Have you ever had the fresh spring rolls? Its a Vietnamese salad wrap made using the rice paper. The best part is it can be customised as per your taste preferences.
Even though this can be made with shredded chicken or cooked prawns, I opted for a vegetarian version of it. The best pair for this lovely spring roll is none other than the peanut sauce. Just a dip into the sauce and having a bite of it will make you so happy if you're like me 😂.
Yes, I start dancing while sitting when I eat good food 😂 I know it's kinda wired but good food never fails to make me happy.
INGREDIENTS (for spring rolls)
10 rice paper sheets
1 each green and red bell pepper
1 apple
1/2 cup broccoli
5 romaine lettuce leaves
1 carrot
Few stems of parsley or cilantro or mint leaves
METHOD
Keep all ingredients ready before you are ready to make it.
Make sure you chop all the vegetables lengthwise. I have added apples for the slight sweetness. You may even parboil the vegetables if you like to.
If you wish to add some prawn or chicken to the wrap, cook it earlier and let it cool down to the room temperature.
Take cold water in a large bowl for dipping the rice paper. While dipping don't leave it in the water for long. All it needs is just a second of dipping, If you leave it for long the rice paper will tear.
Take a plate and lay the prepared rice paper on the plate and start arranging the vegetables on one side of the circle. Make sure you give a good combination of vegetables so that you get all flavours when taking a bite.

INGREDIENTS (peanut dipping sauce)
1/2 cup peanut butter
2 tbsp honey
1 tbsp soy sauce
1 small clove garlic grated (optional)
1 tsp sesame seeds
1/2 tbsp chilli flakes
warm water as needed
METHOD
Add all ingredients to a bowl and add warm water little by a little while mixing.
Mix it well until all the ingredients are completely combined. Make sure the sauce is pourable but not runny. Taste and adjust.
This sauce can be stored in an airtight container for a week in the refrigerator.
