Kale is known as the king of greens. It has a similar taste to the moringa leaves which is equally healthy.
Both the leaves have a slightly bitter taste to them and the same texture when cooked. Coming from India am used to the moringa leaves a lot and after moving to the UK it has been hard to find the Indian variety greens.
I often try to include some kind of greens in my diet at least once a week but am disappointed that it's not as easy to find them here. The only option here was the spinach and I do make a lot of spinach.
This time while my grocery shopping I found the chopped curly kale and thought why not try it in the Indian style. To my surprise, it turned out amazing.
The coconut and onions balance the bitterness of the kale. It was so softly cooked and for a minute I felt like am eating an Indian traditional meal. 😂
I am now thinking of trying the peanut powder stir fry with kale which we used to make with moringa leaves.
Give it a try and you will not be disappointed.
INGREDIENTS
TEMPERING
1 tbsp oil
1/2 tbsp mustard seeds
1/2 tsp cumin seeds
2 dry red chilli
1 onion chopped
4 cloves garlic chopped
1/2 tsp turmeric powder
Salt to taste
1/2 cup water
1/2 cup shredded coconut
METHOD
* Remove the hard stem from the kale, wash and chop the leaves roughly.
* Heat a saute pan on medium heat. Add oil to the hot pan and add the tempering ingredients, let it splutter.
* Add turmeric powder, mix well.
* Add the chopped kale to the pan and saute till slightly wilted.
* Add salt to taste, sprinkle the 1/2 cup water and mix. Close and cook for 5 - 10 mins or until the kale is cooked completely.
* Sprinkle the shredded coconut and stir it, cook for a minute. Taste and adjust salt.
* Serve hot.
