Badham Halwa |Almond Halwa

Most of us will have a memory of eating the yellow color sweet packed in butter paper, in the traditional weddings. Yes i too have that fond memory.
From my childhood i have always adored sweets and my sweet tooth is active 24x7. I do try to keep my sweet consumption to the healthier side and this recipe is no different. 

Almonds are high in vitamin E and thats good for the skin. 😂 See i am hiding the truth of the amount of ghee and sugar in this sweet and talking about the goodness of almonds. Thats not me talking its the 👿 that hides in my sweet cravings. 
Anyways this recipe was a first timer for me but turned out really good and brought back the wedding memories. 

INGREDIENTS 

150gms almonds
150gms sugar
150ml milk
100gms ghee
1 pinch of salt
1 fat pinch of saffron (if not use cardamom and food color) 
4 almonds slivered for garnish

METHOD 

Soak the almonds in hot water for 30 mins and after 30 mins peel the almonds but squishing it between the index and thumb finger. 
Add the peeled almonds and milk to a blender and blend it to a coarse paste. 

The ghee has to be added in 3 batches. The whole process has to be done in a medium low heat. 

In a nonstick pan add the 1st batch ghee along with the almond paste. 

Fry for couple of minutes until the ghee is absorbed.

Add the saffron and mix well until the almonds are no more raw.

Add in the sugar and salt now and keep mixing. After adding the sugar the mixture will liquidify. Dont worry just keep stirring and continue cooking in medium low heat.

Once the mixture starts bubbling add in the 2nd batch of ghee and mix until its completely absorbed. 

Now add in the 3rd and final batch of ghee and let it cook until absorbed and the halwa looks glossy. 

Remove from heat and add the slivered almonds and serve warm.
