Coriander & Mint Chutney

This is a basic coconut chutney with a lovely fresh flavours of mint and coriander. 
The mint and coriander gives a refreshing taste to the chutney along with a beautiful green color. 

The roasted urad dal gives a nice nutty taste to the chutney. Totally this is a amazing side for some piping hot idly or dosa. Every flavour compliments each other. 

INGREDIENTS 

1 tsp oil
3 tbsp urad dal
4 garlic
1 inch ginger 
5 green chillies 
1 large bunch coriander leaves 
1 small bunch mint leaves

1 small piece tamarind
1 whole coconut chopped
3 tbsp roasted gram dal
Salt to taste

1 tbsp oil
½ tbsp mustard seeds
1 tsp urad
1 dry red chilli (optional)
Few curry leaves

METHOD
In a pan add 1 tsop oil and roast the urad dal until slightly brown, alone with this add in the garlic, ginger and green chillies and saute for a couple of minutes.

Next add in the coriander and mint leaves and fry until the leaves have wilted.

Add 1 coconut chopped, tamarind and roasted gram dal to the pan and switch off the heat. Let it cool completely.

Add this mixture to a blender and blend it with water until fine. Add salt to taste and mix well. 

Let temper this chutney. 

In a small pan add 1 tbsp oil and add mustard seeds and urad dal and when they splutter add in the curry leaves and add this to the chutney and give it a nice mix. 

Serve with some hot idly or dosa.
