Mutta Semiya | Semiya Biryani

Mutta semiya or semiya biryani is a fusion dish thats a combo of a tiffen and lunch. I am sure it must have been found by a biryani lover 😂. 
Nowadays many of us are hesitant to consume rice but rice isnt the ememy. Thats my thought 😬. So coming back to the dish, this is light on stomach and have the exact flavours of a biryani. 

So if you ever crave for a biryani then this is the answer to all your biryani cravings. Its easy to make and tastes amazing. Even easier with the instant pot method. 
INGREDIENTS

2 cups vermicelli
3 cups water

2 tbsp + 1 tsp oil
1 bay leaf
2 cardamom pods
4 cloves
1 inch cinnamon

1 large onion chopped
3 green chilli slit
1 large tomato chopped
2 tbsp ginger garlic chopped
1 cup mixed vegetables (optional) 
1 handful mint leaves
1 handful coriander leaves

1 tbsp chilli powder
1 tbsp coriander powder
1 tsp turmeric powder
1 tsp garam masala powder
Salt to taste

5 eggs

RAITA

1 onion sliced thinly 
1 tomato chopped finely
2 green chillis chopped
1 handful coriander leaves 
½ tsp crushed cumin seeds
½ tsp crushed pepper
Salt to taste
1½ cup yogurt

METHOD

Switch on the instant pot in saute mode, once hot add 1 tsp oil and roast the vermicelli to a golden brown color. Remove and set aside.

Add the 2 tbsp oil to the pot and temper with the whole garam masala.

Once its aromatic add in the chopped onions and fry for a minute then add the green chilli and saute until the onions are translucent.

Add in the chopped ginver garlic and saute until the raw smell leaves. 

Next add the tomatoes along with the mint leaves and fry for couple of minutes.

Next goes the spice powders (chilli, coriander, turmeric and garam masala powder). Add salt to taste and give it a nice mix.

Add in the vegetables and mix well. Pour required water to the pan and deglaze the instant pot to avoid the burn notice later.

Add in the roasted vermicelli to the pot and close the lid.

Switch off the saute mode. Pressure cook for 1 minute on high pressure.

Once the timer goes off quick release the pressure and after the pressure pin drops open the lid and without mixing, break the eggs on top of the vermicelli and cover with the lid.

Cook for 2 mins on steam mode to cook the eggs partially.

After 2 minutes open the lid and give it a gentle mix so the eggs get mixed and cooked in the heat of the pans contents.

Add the coriander leaves.

Now prepare the raita with all ingredients given under RAITA section.

Store the raita in fridge until serving.

Serve the egg vermicelli hot with the raita.
