Palak Paneer

Palak paneer is a famous indian dish made with the indian cottage cheese cooked in the pureed spinach with beautiful aromatic spices. 
Almost every restaurant will have palak paneer in their menu cards. Most of the times the palak paneer we make at home doesn't have the bright green color that the restaurants serve. 

If you follow the recipe i have provided you will achive the exact restaurant style palak paneer with the bright green color and the creamy texture. 

The spices added will give a mild touch of spiciness to this creamy dish. 
INGREDIENTS

Onion Paste
1 cup onions (sliced) 
¼ cup cashew (soaked)
5-6 green chillies 
1 cup water

Spinach Puree
1 large bunch spinach(around 6 cups) 
5 cups water

Curry
250 gms paneer (cubed) 
3 tsp oil
2 tbsp ginger garlic paste
1 large tomato (chopped) 
½ tbsp kasuri methi (crushed) 
1 tsp garam masala
Salt to taste
2 tbsp cream (optional) 

METHOD 

Cook the onion paste ingredients in a pan until the onions are soft. 

Bring the 5 cups water to a boil and add the spinach to it and let it cook for exactly 4 minutes. Strain it and add the cooked spinach to cold water for 5 minutes. Remove from water and set aside.

Puree the onions and spinach separately. 

In a pan add the oil and once hot add the ginger garlic paste to it and cook until the raw smell leaves. 

Next add in the chopped tomatoes and cook for 2 minutes or until the tomatoes become mushy. 

Add in the onion puree to the pan and cook on a low flame (or the mixture will splatter). 

After 5 minutes add in the spinach puree, mix it well and bring to a boil. 

Add the garam masala and kasuri methi to the pan along with salt to taste. Mix well.

Add the paneer cubes, mix and cook covered for 5 minutes. If the gravy is thick add some water to adjust the consistency. 

Transfer to a serving bowl and top it with the cream for garnish. 

Serve hot with roti, naan or rice.
