Easy Kovakkai Roast |Tindora Fry |Ivy Gourd Fry

kovakkai fry is simple, easy to make homestyle poriyal/ varuval recipe using Ivy gourd. Steaming and slow cooking makes it a healthy South Indian style stir fry variety
Kovakkai is rich in nutrition and vitamin c, its high fiber content relieves constipation, keeps blood sugar level under control, and good for people with diabetes. It is also effective for weight loss

Kovakkai takes a long time to cook, so make sure to slice thinly. It tastes better only when sauteed nicely in oil and cooked until it gets shrunken. So oil is needed a bit more.
INGREDIENTS

1 tbsp oil
1 tsp mustard seeds 
1 tsp cumin seeds 

1 onion chopped
Few curry leaves 
500gm kovakkai/ivy gourd/tindora

1 tbsp chilli powder 
1 tsp turmeric powder
Salt to taste 

½ cup dry or fresh coconut

METHOD

In a pan add the oil and temper with the mustard and cumin seeds.

Once they splutter add in the onion and curry leaves, saute till the onions are translucent.

Add in the chopped tindora/kovakkai and keep sautéing for 3 minutes then add in the spice powders and give it a nice mix until everything is combined well.

Cover and cook on a medium high heat for 5 minutes, open and give it a mix and again cover and cook until the vegetables are soft and few pieces are browned.

5 minutes before switiching off the heat add in the coconut and jeep roasting so that the coconut gets mixed well and gives an excellent flavour to the dish.

Totally this dish takes 15-20 to cook. 

Serve it hot with rasam rice or sambar rice.
