Keto Mug Cake is such a great recipe if you are craving cake or something chocolaty. It is easy to make, and only takes 2 minutes in the microwave to puff up and become a delicious low carb dessert.
Spoonful of Keto Chocolaty goodness all in few minutes with the minimal ingredients from your pantry. This doest need to be restricted to only keto eaters ad the addition of almond meal makes it a healthy option for the kids who make a fuss to eat the nuts.
Trust me they will start asking for seconds if you give them this cake.
I know many friends who restrict themselves from a piece of chocolaty heaven just because they follow keto. But this recipe here is a boon to all of them as you will never ever miss the soft fluffy cakes.
4 tbsp almond flour
½ tbsp baking powder
1 tsp cocoa powder
1 tsp monk fruit sweetner
1 tsp vanilla extract
2 tbsp cream
1 egg
1 tbsp crushed almonds (optional)
METHOD
In a miwing bowl add the almond flour, baking powand cocoa powder. Give it a nice mix until everything is combined.
Once its combined add in the wet ingredients, cream, monk fruit sweetner, egg and vanilla extract. Mix it well until no more dry flour is left.
Smear some butter in the microwavable bowl which the cake is going to be baked.
Transfer the prepared batter to the buttered bowl, sprinkle some crushed almonds on the top for a lovely crunch and microwave it on a high for 2 minutes in a 800w microwave.
Using a toothpick or knife check for doneness, if not cook it for 30 secs more.
Carefully remove the bowl from microwave and let it rest for 5 mins in the bowl.
After 5 minutes invert the bowl on to a plate to remove the cake from the bowl. It must slide out easily if not run a knife around the edges of the cake to remove easily.
Serve it warm with a scoop of keto ice cream or whipped cream.
