Keto Microwave Strawberry Pudding

Looking for a simple, delicious dessert? This yummy keto microwave strawberry pudding is low carb and whips up in the microwave in just a couple of minutes! One of the great things about the Keto diet is that you can still indulge your sweet tooth. 
There are so many decadent recipes out there for keto cookies, cakes and more. These desserts are great, but they aren’t always the most convenient to make quickly.

But this strawberry pudding is a great example of a delicious, super easy recipe! It’s sure to satisfy your craving for a sweet little something. 

INGREDIENTS

For almond meal
½ cup almonds for almond meal

For pudding
4 tbsp almond meal 
2 tbsp cream
1 egg
1 tsp vanilla extract
½ tbsp baking powder 
1 tbsp keto sweetner (i used monk fruit sweetner)
4 large strawberries chopped

METHOD

Let prepare the almond meal, for that add the almonds to a blender and pulse it until the almonds are powdered. Remember do not run the blender for more than 20 secs at a time.

Now add the powdered almonds to a seive and seive it to get the fine almond meal. Save the big pieces of almonds for later use in cakes.

As our almond meal is ready lets start with the pudding.

Add the almond meal to a mixing bowl along with the baking powder and give a mix.

To this add the sweetner, cream, egg and vanilla extract.

Mix it well until everything is combined and no more dry flour is left.

To this mixture add the chopped strawberries and fold it in gently.

Butter the bowl that your using to microwave the pudding. To this bowl add the prepared pudding mixture and microwave it for 1½ minutes/90 seconds.

Carefully remove the bowl from the microwave and let it rest for 5 minutes. Invert this bowl to a plate.

Chill it completely before serving. Enjoy!!!
