Minty Cucumber Guacamole

Guacamole is the easiest and creamiest dip you can ever make and this is the healthiest one too. Usually this can be served at any party or get together and always a hit. 
Literally this is a no cook recipe. The basic guacamole is dont with the basic ingredients but today i have made a twist to the basic recipe which makes the guacamole more refreshing and cooling as well. 

The cucumber makes this dish a cooling one while the addition of mint makes it so refreshing. Take a bite with the tortilla chips and you cant stop until the bowl is empty 😂 the best part is you dont have to have any guilt as it is a healthy addition to your daily diet. 

INGREDIENTS

1 ripe avocado
1 tomato, chopped finely 
½ onion, chopped finely
1 green chilli, chopped finely (any chilli of your choice)
½ cucumber, chopped finely 
1 tbsp lemon juice 
1 tbsp fresh or dried mint leaves, chopped 
Salt & pepper to taste
1 tbsp olive oil (optional) 
METHOD 

Cut the avocado in half and remove the pit, cut the avocado roughly and scoop out the flesh from the skin and add it to a bowl. Give it a slight mash. Do not mash it to cream, leave few chunks. 

Add in the chopped onions, tomato, chilli (you can remove the seeds and chop if you dont want it to be spicy), lemon juice, salt, pepper, mint leaves and cucumber. 

Give everything a nice mix until combined. Check for salt and adjust accordingly. 

Serve it cold with some tortilla chips or nachos.
