This taco takes a Mediterranean favorite and turns into a fresh tasting, hearty and super yummy taco!
Crispy Baked Falafels and kale slaw tucked into a gluten-free corn tortilla and topped with a creamy & tangy garlic mayo which is made from scratch.
The best part of this recipe is everything is made from scratch and that gives a lot of happiness and joy when the end result is enjoyed.
Roti Taco
INGREDIENTS
2 Cup whole wheat flour
2 tbsp oil
Salt to taste
Required water
METHOD
Add all the ingredients in a mixing bowl and form a soft dough.
Pinch a small amount of the dough and roll it into a thin disk, cut it into round shape.
Place the disk in hot tava and cook it like a regular roti.
Remove from heat and poke both sides with a fork and apply oil on both sides.
Place this roti in a shape of a taco and bake it for 25 - 30 mins or until hard enough in a preheated 125°c oven.
Remove and cool completely.
Garlic Mayo
INGREDIENTS
¾ cup garlic cloves
¼ cup lemon juice
Salt to taste
1½ cup olive oil
METHOD
Add the garlic salt and lemon juice to a blender and blend it until coarse paste.
While the blender is running start drizzling olive oil in a steady stream over the garlic.
Run the blender until it resembles a semi thick garlic mayo.
Mint Falafel
INGREDIENTS
2 cups chickpea, soaked overnight
2 cups mint leaves
1 onion
6 cloves garlic
2 large green chillies (optional)
4-5 tbsp gram flour
1 tbsp cumin powder
2 tbsp coriander powder
Salt to taste
Add the soaked chickpea, mint leaves, onion, garlic and green chillies to a blender and blend it to a coarse paste. Transfer to a bowl.
Add cumin powder, coriander powder, salt and gram flour. Mix well until combined. Let it rest in fridge until use.
Take a small amount of the falafel mixture and form a ball shape with it.
You can deep fry or airfry it at 200 °C for 15 minutes.
How to
Taco
Take a prepared taco shell and smear the garlic mayo inside and arrange some salad in the shell.
Next take 2 falafel and brake it into halves. Place the falafel inaide the taco shell and serve it.
Wrap
Make a regular roti with the dough we prepared.
Smear the garlic mayo all over the roti and arrange some salad on the roti then top it with a falafel and smash the falafel a bit. Wrap it and serve.
