Nethili meen is quite versatile tiny fish which suits for variety of preparations. Be it fried, saute… or even on top of pizza they taste yum. Deep fried version must be the favorite of many, this is one of the recipes which can be made in a jiffy and tastes amazing too.
Usually the restaurants serve it in a deep red color which is achieved by using the food colour. But i wanted this to be a healthy one at the same time no compromise in the taste.
I have given the airfryer and deep frying method which will be easy to follow and achieve the same taste as the restaurants minus the unhealthy stuff.
INGREDIENTS
Set 1
1 kg anchovies1 tsp garam masala
1 tsp pepper powder
1 tsp garlic powder
1 tsp cumin powder
1½ tbsp chilli powder
1½ tbsp coriander powder
Salt to taste
1 tbsp oil
Set 2
2 tbsp corn flour
3 tbsp rice flour
Oil for deep frying
METHOD
Wash the anchovies and while still wet but not much water add all the spices from the Set 1 and mix it well until combined and all the fish pieces are cover in the spices.
Add the Set 2 ingredients and toss the fish pieces so that all the pieces are covered with the flour evenly.
Cove the bowl and let it marinade for atleast 30 mins.
Air Fryer
Preheat the airfryer @200°C for 5 minutes and meanwhile arrange the fish in the basket without over crowding the basket for a evenly cooked batch.
Place the basket back in the airfryer and let it cook for 10 mins @200°C and after 10 mins remove the basket and drizzle some oil on top of the fish and airfry it again for 5 more minutes.
Remove and serve hot.
Deep Frying
Heat oil for deep frying in a pan and once the oil is hot enough add the fishes in batch and cook it until the fish is completely cooked and the outer is crispy.
Before draining the fish out of the oil add a handful of curry leaves to the oil and let it become crispy.
The curry leaves is completely optional but gives a great flavour to the fish and tastes amazing.
Drain the fish and serve hot.
