Spicy Egg Masala |Mutta Masala

Spicy Egg Masala  is a hugely popular Indian delicacy which can easily available in every road side Dhaba, restaurants, hotels and even in street food stalls. It is one of the comfort foods which gets prepared in almost every eggetarian houses very often. In this preparation, hard boiled Eggs are cooked in Onions, Tomatoes and Garam Masala powder. This finger licking preparation can be accompanied with Rice items or Indian flat bread.

Egg curries are always a great option for bachelors, students and newly married homemakers. They are easy to make as compared to other non-vegetarian dishes like fish and meat.
Egg curries are highly versatile dish and easily hook up with Parathas, Naan, Kulcha, Rotis, Pooris and even with rice items like Steamed rice, Jeera rice, Pulao etc. Egg Masala is one of the easier one among Egg curries and it tastes divine with its accomplishments.

INGREDIENTS

2 tbsp oil 
1 tsp cumin seeds 
1 tsp fennel seeds 

2 large onions chopped
½ cup peeled shallots
3 tomatoes chopped 
1 inch ginger finely chopped
8-10 garlic sliced
Handful curry leaves

1 tbsp chilli powder 
1 tbsp coriander powder 
1 tsp turmeric powder 
1 tsp garam masala 
Salt to taste 

5 boiled eggs slit randomly 

METHOD 

In a pan add the oil and temper with the cumin and fennel seeds. Let it splutter. 

Add in the chopped onions along with the curry leaves and saute for couple of minutes. 

Add in the shallots and cook until the onions are translucent. 

Add in the chopped ginger and garlic and let it cook until the raw smell leaves. 

Next goes in the chopped tomatoes. Cook it till the tomato becomes mushy. 

Add in the spices to the pan and give it a mix until everything is combined. Add ½ cup water, cover and cook until you see traces of oil on the top. 

Add in the slit eggs to the masala and give it a mix so that the masala coats the eggs. 

Cover and cook for further 5 minutes. This will help the masala to penetrate in to the egg slits. 

Serve it hot with roti, dosa or even hot steamed rice.
