Chinese Saucy Vegetable

All of us are always trying to get in some of the goodness thru the food we eat, but many times we fail coz of the time constraints. 
But this is the very easy way to cook them and it is so tasty that you can just eat this alone and be filled. These are not only easy to prepare but its very tasty to eat. 

Lets get in some veggies...

INGREDIENTS 

Vegetables 3 cups (i used broccoli, capsicum and baby corn)
Spring onions 1 bunch chopped and seperated
Garlic 6 cloves chopped
Ginger 1 inch sliced
Chicken or Vegetable Stock 1 cup (i used 1 chicken bouillon cube with 1 cup water)
Corn Starch 2 tsp
Water for corn starch 1/2 cup
Soy sauce 1 tbsp
Fish sauce 2 tbsp (optional)
Oil 2 tsp
Salt and pepper to taste

Method

In a large pan add the oil and saute the white part of spring onion, garlic and ginger till the raw smell goes and then add the baby corn(or any hard veggie your using) along with pepper and soy sauce, saute for couple of minutes. 
Add the rest of the vegetables and give it a nice mix. Add the stock, cover the pan and let the vegetable cook till the prefered doneness. 

Mix the corn starch with water and keep aside. 

By this time the stock would have been reduced nicely. 

Reduce the heat and add in the corn starch mixture to the pan and mix well and keep cooking till you see thick sauce that coats the vegetables.

Turn off the heat and check for the salt and pepper, add if more needed.

Serve hot and enjoy...
